The Nare is the 5 star country house hotel by the sea and has been Cornwall's highest rated luxury hotel for over 30 years. Renowned for its traditional, unobtrusive service and spectacular sea views over Carne Beach, the hotel offers standards of comfort and service that are increasingly difficult to find.
The Nare is set in some 8 acres and features 41 spacious rooms and suites, a traditional dining room, the fine dining Quarterdeck restaurant, and a comprehensive range of leisure facilities including tennis court, croquet lawn, indoor and outdoor swimming pools, a health spa, and a classic 38’ motor launch, Alice Rose.
The addition of The Nare's new Whittington Suites - four exceedingly comfortable and spacious sea view suites at the western end of the hotel - means there are more opportunities for chefs to join the well-established team.
We have a moderate-sized brigade which runs 2 kitchens.
Our traditional dining room has 1 AA rosette and serves breakfast, afternoon tea and dinner. The food here is silver served and a firm favourite with our residents. Intense services for 60-70 guests each night.
The Quarterdeck has been recently awarded 2 AA rosettes. Lunch can be extremely busy with cuisine best described as Bistro/Brasserie. Dinner is a finer affair with a seasonal limited a la carte restaurant where the chefs may show their talent and flair using modern methods of cuisine and presentation. A very seasonal restaurant where you earn your stripes in the summer and winter is a time for development and planning.
Chef de parties at The Nare Hotel will need to demonstrate their qualities. You will ensure that our junior team are working in line with current regulations and legislation. Manage the section you are working on and ensure that all our produce is safe and handled according to our food safety policy. Ensure that the daily diary is completed and that you are having significant input in this area. Understand all elements of our food safety policy and ensure that everyone is working within our agreements. Ours being The Nare food safety policy. Ensure that our environment is safe to work in and report all equipment breakdown and defects. Identify equipment that needs servicing. Chef de parties should have a competent understanding of cooking fresh produce and accurately prepare and deliver food as it is meant to be served in a timely manner. Assist Chef with the ordering of specific provisions for your area. You will also have some input on our menus.
This is a very high-quality operation and accordingly, candidates must have a significant aspiration to working in quality hotels. Whilst at one level this is a traditional business, it is also progressive, and candidates should be able to demonstrate a much more contemporary outlook on life and an ability to adapt to a fast-moving, busy operation.
You will need a solid background and access to your own transport in order for this position to be viable.
This role is not for the journeyman or relief chef.
